Plum and Coconut Chai Pudding
I usually just add fruit and liquid of some sort when making a chia pudding, but this time, I had some coconut milk that needed to be used up, so combining that with some over ripe plums, which I cooked up into a sauce, made these little puddings which are delicious and healthy too.Plum and Coconut Chia Pudding Yield: SERVES 6 Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes Print Ingredients Plum Sauce 3 large plums.2 tbs of maple syrup Chia Pudding 1/4 cup of chia seeds.1 tbs of unsweetened shredded coconut to decorate: unsweetened shredded coconut Instructions Plum Sauce Peel the plums Chop and add to a saucepan Bring to a boil and then allow to simmer covered, stirring occasionally until the plums break down into more of a sauce consistency Add the lime juice and maple syrup and continue to simmer until sauce reduces down and thickens. .
